Here is another dish well-loved by my family, Italian-style Chicken Meatballs. They make great fingerfood or baked in tomato sauce and cheese.

| INGREDIENTS |
| Minced Chicken - 500 grams |
|
Garlic - 2 cloves, chopped very finely
|
| Minced Onion - 100 grams |
|
Red chilli - 1, de-seeded and chopped very finely
|
|
Fresh Italian Parsley - 15 grams, shredded very finely
|
|
Juice and rind (finely grated) of 1 lemon
|
| Fresh Breadcrumbs - 30 grams |
| Nutmeg - a pinch |
|
Sea salt and cracked black pepper to taste

| Grated Parmesan Cheese - 50 grams |

| METHOD |
|
Mix all the ingredients together. Form into tiny meatballs. Fry till golden brown. Serve on toothpicks as fingerfoods or cover with marinara sauce and grated cheese, bake till cheese browns and serve hot with crusty bread and salad.
