Curried Stuffed Peppers is another take on our spicy lamb mince recipe.It is easy, delicious and dressy enough for parties. It is great served with salad. The ARVI curry powder is so aromatic, that few ingredients are needed to make this dish exceptional in taste! Try it for yourself and you'll taste the difference!

| INGREDIENTS |
| Green Peppers - 2, large, about 500 grams, quarted and deseeded |
| Minced lamb - 175 grams |

Onions - 2, medium, peeled and chopped finely
|
| Potatoes - 300 grams, cubed |
|
Tomatoes - 1, medium, sliced finely
|
|
Cooking Oil - 2 tablespoons + 2 tablespoons
|
| ARVI Spice blend - 2 tablespoons |
| Cooked Rice - 200 grams |
| Grated Cheese - 40 grams |
| Breadcrumbs - 20 grams |

| METHOD |
|
Heat 2 tablespoons oil in frying pan, fry onions & tomato till soft. Add curry powder. Add meat and saute. Add cubed potatoes and stir for a minute. Next add 1 cup water. Simmer till all the liquid has evaporated. Remove and leave to cool. Mix with the cooked rice and adjust seasoning. Plunge the quarted green peppers into boiling water for a minute. Remove and drain well. Pack the mince and rice mixture into each pepper piece. Mix the grated cheese and breadcrumbs together with the remaining 2 tablespoons of oil. Press this on top of the mince mixture in the peppers. Bake, covered at 180*C for 15 minutes and uncovered for another 10 minutes. Serve with lemon wedges.
