| Basic everyday kind of recipe, but these Vanilla Blueberry Pancakes are Egg Free! They are fluffy and delicious! They look really good and taste great!

| INGREDIENTS |
| Plain Flour - 125 grams |
| Baking Powder - 5 grams |
| Baking Soda - 1 gram |
| Caster Sugar - 15 grams |
| Salt - 1 gram |
| Vanilla Extract - 1/2 teaspoon |
| Buttermilk - 340 ml |
| Softened Butter - 15 gram |
| Fresh Blueberries - 125 grams |

| METHOD |

Whisk all the ingredients together, except the blueberries. Gently fold in the berries. Keep aside the pancake batter for 20 minutes or overnight. Lightly butter pancake pan. Pour 1/4 cupfuls of pancake batter. When bubbles start appearing on the surface, flip them over. Serve with butter and maple syrup. Makes 12 3" pancakes.
