An unusual pasta sauce made with tequila and salmon. Very quick to prepare, looks and tastes delicious. Great for an intimate dinner party with chilled wine and salad.

| INGREDIENTS |
| Salmon Fillet - 300grams, cut into cubes |
|
Red Onions - 80 grams, sliced
|

Garlic - 25 grams, chopped
|
|
Pitted Black Olives - 50 grams, sliced
|
| Vine Ripened Tomatoes - 110 grams, deseeded and chopped |
| Tomato Paste - 15 grams |
| Canned Tomato Sauce - 60 ml |
| Hot Chicken Stock - 125 ml |
| Cream - 250 ml |
| Anchovies in Olive Oil - 1 piece, mashed * optional |

Fresh Basil - 10 grams, thinly shredded
|
| Gold Tequila - 60 ml |
|
Olive Oil - 30 ml
|
| Cracked Black Pepper |
| Linguine to serve |

| METHOD |
|
Heat olive oil in a large pan. Add sliced red onions and saute till softened. Add chopped garlic and stir for a minute. Follow with the mashed anchovy, tomato paste and sauce. When sauce starts to boil, add the hot chicken stock and tequila followed with the cream. Simmer till thickened slightly. Add the salmon, olives and chopped tomatoes. When salmon is just cooked, add the shredded basil, cracked black pepper and remove from heat. Serve over hot buttered linguine. Serve at once. Unbelievably easy and oh so delicious!

TO TWEAK THIS RECIPE
|
| Substitute with 150 grams thinly sliced smoked salmon. Add it at the very end just after turning off the heat. Pretty decadent! |
