Yoghurt Potato Salad

A really easy and delicious take on comforting potato salad! Tangy smooth yoghurt gives great taste and lightness to this version. Serve it in place of regular potato salad. Perfect accompaniment to any meal. This great recipe was contributed by my cooking-genius father, who has made eating right a way of life! Enjoy!  

Difficulty: Easy

Yoghurt Potato Salad
INGREDIENTS

Large sized potatoes boiled with jacket (diced)

One small size green chilli chopped (optional)

One medium size onion chopped

One table spoon chopped cilantro

Black pepper (coarse) half teaspoon

Salt to taste
Yoghurt one tablespoon
Lime juice one teaspoon

METHOD 

Mix all the ingredients in a salad bowl, chill and serve.        

 

TO TWEAK THIS RECIPE

Red-skinned potatoes work really well here. They give great colour and taste. The yoghurt in the recipe can be replaced with low-fat cottage cheese or a combination of the two. I added a couple of chopped tomatoes to add colour. This is a really refreshing version of potato salad and has a lot less calories too! Try it!
