Cinammon Apple Bake

For years my mother has been making this delicious apple bake, which we teasingly called 'apple mess'! Whatever the name, it is absolutely luscious. Served with warm custard or vanilla ice cream, it is a taste of heaven!

Cinammon Apple Bake
INGREDIENTS
Filling:

Green Apples - 6, peeled, cored and thinly sliced 

Light Brown Sugar - 190 grams

Castor Sugar - 45 grams

Lemon Juice - to taste (check the acidity of apples before adding) 

Fine Salt - 1/4 teaspoon

Allspice - 1 teaspoon
Cinnamon - 1/2 teaspoon

Vanilla Essence - 2 teaspoons 

Cornstarch - 1 dessertspoon mixed with 1/4 cup cool water 
Ingredients for Crust:
Self Raising Flour - 125 grams 
Plain Flour - 125 grams
Butter - 125 grams, cubed 
Milk - 2 tablespoons 
Cold Water to bind pastry 
 
METHOD 

For Filling, add everything but the cornstarch mixed with water to a pan and cook covered till apples are just done. Then add the cornstarch mixture and continue cooking till the apple filling thickens. Remove from heat and cool. For Crust, sift both flours into a mixing bowl and rub in the butter till mixture resembles breadcrumbs. Sprinkle with milk and then bind together with the cold water. To Assemble, roll out crust on baking paper to about 4mm thickness. Pile the apple filling in the middle, omitting the juices. Fold the crust over to resemble an envelope. Brush the crust with 1 tablespoon milk, sprinkle with 1 tablespoon castor sugar and dot with 1 tablespoon butter. Prick all over with a fork. Bake in an oven preheated to 200 degrees celsius for 30 minutes. Remove when done and cool before cutting. Serve warm with custard or vanilla ice-cream.
