My daughter, who very unaturally for a child, doesn't like sweets and sweet dishes. Yet, I got the thumbs-up from her for this Sweet and Spicy Chicken Bites. Try it. You'll find it very mild and tasty. Up the spice factor if preferred.

| INGREDIENTS |
| Chicken Fillets - 400 grams, cut into bite-sized pieces |

Onions - 1, peeled and sliced
|

Cornstarch - 1/2 cup
|
|
Dark Soy Sauce - 1 tablespoon
|
|
Honey - 1 tablespoon
|
|
Tomato Ketchup - 2 tablespoons
|
| Chilli Sauce - 1 tablespoon |
| Rice Vinegar - 1/2 teaspoon |
| Orange Capsicum - deseeded and cut into cubes |

Spring Onions for garnish

| MARINADE |
|
ARVI Spice Blend - 1 teaspoon
|
| Ground Black Pepper - 1/2 teaspoon |
| Salt - 1/2 teaspoon |
| Chicken Stock cube - 1/2 (optional) |

| METHOD |
| Marinate chicken with items listed under "marinade". Leave for about an hour. Then roll in cornstarch and fry till cooked and crisp. Take out of pan and drain on kitchen towels. Remove all but 1 tablespoon oil from pan. Fry onions, followed by the capsicums. Then add all the sauces, the honey and the vinegar. Return fried chicken to pan. Toss to coat; garnish with spring onions and remove from fire. Great with rice. Serves 4. |
