Cranberry Apple Rock Buns
 
This was a favourite childhood treat made by my younger aunt when I was little. The taste of those special apple-filled rock buns still linger in my memory...So in a nostalgic fit, I decided to recreate them without eggs, and they turned out beautifully. I added a dash of cinnamon, to go with the apple and cranberries, thus marrying apple-pie with the rock buns! Put them in a pretty box and gifted them to my father for Fathers' Day!         
 
Kid's Jungle Birthday

This is an egg free chocolate cake I made for my son's 4th birthday. Animal Safari CakeThe cake itself is vegan, but I'm not sure about the fondant. So we shall assume that it isn't! The chocolate cake is covered in chocolate Fun for kidsbuttercream and fondant. I just rolled out different coloured blobs of fondant and covered the cake with it. Then I stuck on animal shaped cut-outs which I dressed up with more bits of fondant to give a somewhat 3D look. My son was thrilled with his cake. He just wanted all the animals on his plate! Eggless Cupcakes
These are the egg free chocolate fudge cupcakes I made for my son's  birthday celebration at his pre-school. The kids loved the colours and the different sprinkles used on each cake. It was well worth masquerading as the 'Mad Baker' and producing the 70 cupcakes for the party as everyone had a grand time. To enquire about these cupcakes, click here.  
 
Eggless Strawberry Cheesecake
The next successful addition to the egg free cheesecake range -  the egg free  Strawberry Cheesecake,  made with completely low-fat  ingredients and topped with strawberries. The sides are covered with homemade egg free sponge fingers.  The texture of the cakes was sublime. It didn't "feel" or "taste" low-fat but it was. The cheesecake was a beautiful birthday cake made for a beautiful person, by my partner in the Egg Free zone, Renuka.  
 
Eggless Doughnuts
 

I'm doing something a little different today. I'm giving a recipe for my egg free doughnuts, especially for Emma Linehan from Australia who requested it for her son, James. One word of caution; these turn out really well if they are not overfried. Something to watch out for.

Egg Free Doughnuts

  • Plain Flour - 3/4 cup
  • Strong Bread Flour - 1/4 cup
  • Instant Yeast - 2 teaspoons
  • Caster Sugar - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Vanilla Extract - 1/2 teaspoon
  • Warm Milk - 1/2 cup 
  • Softened Butter - 1 tablespoon

Method : Combine all the ingredients together, except for the butter and knead to a soft dough. Add butter and knead again till smooth and elastic. Cover and leave to rise till dough doubles, about 30 minutes. Roll out to 1/4" thick and cut out doughnuts with a cutter. Cover cut out doughnuts with a damp tea towel and leave to rise again. Lift out carefully and fry in hot oil over medium heat. Glaze them as you wish or toss in cinnamon sugar.

Vegan Chocolate Fudge CakeVegan Chocolate Fudge Cake - check out the moist texture inside!
I tried out a new recipe for a vegan chocolate cake. Now would be a good time to qualify something - I'm not a vegetarian/vegan. I try out egg free recipes because of my little boy's egg allergy. Most times, I find the taste of egg free cakes just "ok", compared with cakes made with eggs. But this experimental Vegan Choc-Fudge Cake turned out to be truly amazing! The cake was moist and held together very well. It was chocolatey and oh-so-moreish!! With the chocolate icing? Positively to die for! Forgive the bad pun, but to all vegans/vegetarians out there, here's a cake you can have and eat it too! I will post the recipe for this one really soon.    
 
Egg Free Vanilla Cupcakes
Another batch of egg free vanilla cupcakes (fairycakes?) made from a new recipe. Looked almost too good to eat! Perfect for a little girls birthday party.
 
Egg Free Vanilla Chocolate Fudge Ice Cream
The quest for egg free, creamy ice cream ended with the above - a very creamy and delicious egg free custard based ice cream in vanilla and chocolate fudge flavours. The chocolate especially was rich and had a wonderful cocoa flavour. The vanilla was good but the taste would be even better with the use of the vanilla bean instead of the pure vanilla extract that I used here. The photographer's privilege - ate the subject of the photos every time!
 
Oreo Cheese Cake
The eggfree Oreo Cheesecake has arrived! Light as air, with a bittersweet Oreo topping and base, the cake was creamy and delicious! Turned out really good! It was easy to remove from the pan and presented well.
 
Eggless Scones with Jam & Cream
These eggfree scones were really light and delicious. As seen in the photo, we served them split and buttered with strawberry jam and lightly whipped cream. They looked good enough to eat and were delicious when eaten! 
 
Eggless Chocolate Cupcakes
I made these eggfree chocolate cupcakes with a dark chocolate ganache topping. Before adding the chocolate ganache, I brushed the cakes with orange-flavoured liqueur. This gave the dense chocolate cupcakes a hint of orange and an intense bitter chocolate finish from the ganache. My 11 year old loved it!
 
Eggless Vanilla Cupcake
Perfect! That is the way these Egg Free Vanilla Cupcakes turned out. They looked and tasted exactly like regular Vanilla cupcakes. The cakes had a light and airy texture. Every mouthful was moist, flavorful and smooth, with the buttercream adding a creamy, vanilla finish. Thanks again to Renuka, the Eggfree Baking Genius! Eggfree Mocca Fudge Bites
Totally fudgy, moist and delicious! That is the only way to describe these Mocha Fudge Bites. Unbelievable, that they are egg free as well. For those of us with egg allergies, these are a heavenly treat. Chocolatey Fudge Cake covered with silky-smooth Mocha Buttercream, dusted with cocoa and dotted with crunchy chocolate dragees are a REAL treat!
 
Eggfree Tiramisu
Smooth and creamy mascarpone custard, layered with coffee and liqueur soaked eggfree vanilla cake slices, dusted with cocoa to give us an incredibly delicious tiramisu! You really cannot tell the difference. The recipe will be coming soon, probably in a couple of weeks. So look me up then.
 
Vegetarian Brownies
Mouth-watering, chocolatey and totally eggfree chocolate fudge brownies! They are totally moreish and so delicious! Its unbelievable that the brownies are eggfree. This one is my cousin Renu's baby so all credit goes to her. Watch this space for her creamy, lowfat and eggfree Oreo Cheesecake. Simply Brilliant!!    
 
Mocha Cream Cake
These are eggless cakes. My cousin, Renuka, came up with them because of my son's allergy to eggs. She is constantly coming up with new recipes to tempt my little one's tastebuds. This was a winner. A vanilla buttercake, iced with coffee buttercream, encrusted with chopped peanuts (substitute with almonds or walnuts) and lightly dusted with cocoa. Yum!
 
Iced Coffee Cupcake
Cupcake version of the coffee-flavoured cake above. Iced with chocolate and vanilla buttercream, with coloured sprinkles, its a kids' dream. Both my children enjoyed these.
 
Chocolate Glazed Doughnuts
These are eggfree doughnuts, glazed with chocolate. When I started making them, the dough didn't look right. But they turned out fine and tasted really good. Much of the doughnut holes disappeared straight out of the pan!
 
Chocolate Chip Cookies
These Chocolate Chip Cookies turned out absolutely brilliant! They looked picture-perfect and tasted wonderful, especially if you like your choc-chip cookies crisp! Totally easy to make, very quickly put together and best off all, EGG-FREE!!! My kids loved them! Can't tell the difference between cookies with eggs and these.  
 
Blueberry Muffin
I just love anything with blueberries. These eggfree blueberry muffins were simple to make, and my son (the one with the egg allergy), loved them! He ate two straight away. It did my mother's heart good to be able to watch him walk into the kitchen, reach up to the counter and grab a muffin, without his mum shrieking hysterically! (I'm totally paranoid about eggs in cooking). It will be a moment to remember for me....
 
Cinammon Apple Bake
I got this recipe from my mother who has been making this Cinnamon Apple Bake for as long as I can remember. But my brother and I used to call it Apple Mess! Impatient to sink our teeth into the hot apple pie, we would get my mother to cut it while still hot and naturally the whole thing would crumble, earning it the name, Apple Mess. In fact, that's what it is called in our family till today.
