My 11 year old loves this dish so much, that she insisted on learning how to make it. An absolutely delicious dish which is great with buttered pasta (that's the way she likes it) or with a green salad and lots of warm crusty rolls to mop up the juices (the way WE like it) all washed down with glasses of chilled wine! Salut!

Difficulty: Easy 

Med-Style Shrimps
INGREDIENTS
Fresh shrimps - peeled and de-veined (you'll have to look up the how-to on another site!)

Garlic - 8 cloves, chopped very finely

Red chilli - 1, de-seeded and chopped very finely

Fresh Basil - 25 grams, shredded very finely 

Juice and rind (finely grated) of 1 lemon 

Sea salt and cracked black pepper to taste 

Generous shavings of Parmesan cheese (Romano if preferred) 
 
METHOD 

Add a couple of tablespoons of olive oil to a heated pan. Toss in garlic and then the chopped chilli and saute for about a minute. Then add shrimps, stir until pink. Add the basil and lemon rind stirring till the basil wilts. Add in lemon juice and take off heat. Toss the cheese through and the season with the sea salt. Serve with cracked black pepper.

 

TO TWEAK THIS RECIPE

A splash of white wine can be added after adding the shrimps.
Can substitute the shrimps with fresh calamari or scallops.
Basil can be replaced with Italian parsley or just regular parsley.
