I've had great success in getting both my kids to "drink" their vegetables, as they just don't eat them! By using this basic soup recipe, I can throw in just about any vegetable or combination, whizz it up, and voila! They drink up! Bottoms up!

| INGREDIENTS |
| Potato - 1 large, peeled and chopped roughly |
|
Onion - 1 medium, peeled and cut into 4s
|
|
Garlic - 1 clove, peeled and chopped
|
|
Liquid stock - 2 cups, any kind
|
|
Milk - 1 cup, or enough to thin soup down to the consistency you like
|
|
(Use pouring cream if preferred)
|
| Any vegetable - chopped up roughly |

| METHOD |
|
Put potato, onion, garlic, vege and stock into a large pot and boil till the potato is very soft. Watch the level of the liquid in the pot. Top up with hot water or stock if necessary. Then cool and process till smooth. Return to pot and thin down with hot milk or cream. Don't let it boil after this or the soup will curdle. Garnish with chopped parsley, freshly cracked black pepper and serve. I use teacups for serving and this recipe makes about 4 teacups.

TO TWEAK THIS RECIPE

| Fresh mushrooms like button or swiss browns or shitake or a combination of all three ; cauliflower; carrots; broccoli; leeks; tiny green peas called 'petit pois' - all work well in this recipe. |
| Can add a couple of tablespoons of sour cream at the end, if preferred. |
