An abolutely delicious Roasted Pepper dip that is quickly put together with few ingredients and bursting with flavour. It tastes great and can be made in a blink of an eye!

| INGREDIENTS |
| Red pepper - 1, large, halved and de-seeded |
|
Spanish onion - 1, medium, peeled and cut into 4s
|

Smoked chicken - 100 grams, skin removed and chopped
|
|
Lemon juice - 2 teaspoons
|
|
Salt - to taste
|

Olive oil for dribbling

| METHOD |
|
Put cut pepper and onion in a heat proof pan, dribble over with olive oil and place under a hot grill till the skin of the pepper blisters. Watch onion doesn't burn. Cool and peel the skin off the peppers. Put peppers, onion and any juices in the pan into a food processor along with the smoked chicken and lemon juice. Whizz the lot up. Add some olive oil to turn the blades if too thick.Taste and adjust seasoning. Great with pita and vegetable crudites. Brilliant as a sandwich spread with salad.

TO TWEAK THIS RECIPE

| Zap 100g of bacon (replace smoked chicken) in the microwave and whizz up with the rest of the stuff. Delish! |
| Can add some low-fat cream cheese or sour cream if preferred. |
