A wonderfully colourful dish, bursting with flavour and aroma. Fairly quick to make. Kids will love these chicken drumlettes because of their spicy cheesy taste.

| INGREDIENTS |
| Chicken Drumlettes/Wings - 12 pieces |
|
Marinate with:

ARVI Spice Blend - 1 teaspoon
|
|
Turmeric Powder - 1/2 teaspoon
|
|
Salt - 1/2 teaspoon
|
|
Throw into the microwave and zap on high for about 1 1/2 minutes.

| Curry leaves - 1 sprig (18 individual leaves), chopped finely |

Red chilli - de-seeded and chopped finely
|
| Panko ( Japanese Breadcrumbs) - 1/4 cup |
|
Parmesan cheese - 1/2 cup, grated
|
| Salt and Pepper - to season lightly |
| Olive Oil |

| METHOD |
| Mix all the above with the semi-cooked wings, adding some oil to moisten mixture and press firmly onto the chicken. Place in a lightly oiled oven-proof pan and bake at 180 degrees till lightly browned and crisp. Serve on a bed of lettuce leaves with lemon wedges. |

| If curry leaves are hard to get, substitute with basil leaves. This works really well too. |
